Only use Polycarbonate, not acrylic. Acrylic will fade. For the vinyl you must use translucent vinyl. Yes if it's a standard cabinet, remove a retainer and slide out. The sign face must be about 3/8" shorter than the cabinet to fit. I recommend measuring the old sign face first.
Your quote is your contract, if you didn't charge for it, you don't have to do it. The contractor should have verified everything was the correct quantity.
You can't go wrong with Roland. I've been in the industry for 12 years and have only used Roland's they are work horses. You don't need laminate for short turn or coroplast signs. But for aluminum, vehicles, etc you need it. I recommend a SEAL cold laminator EL54. Roland's do self cleaning so...
