You adjust the head height manually from low to high (only 2 options) by moving the lever inside the machine on the cut carriage / print head. Make sure to put it back down to normal after finishing printing banners etc. otherwise you don't get a decent seal when the print heads are parked over...
Ideally you want to get some good colour profiling done and as others have said print from versaworks.
Greys can be a very fine balance to get spot on, before we had decent colour profiles we found some success adjusting the ink levels / tonal curves in the job settings in versaworks.

I was always under the impression metallic ink and especially white ink came with quite a bit of additional cost and maintenance and it's own number of potential issues, specifically with solvent printers.

You can also click on the numbers in the very left column and hold CTRL or SHIFT to select multiple variable data entries and they show up blue when selected as per the attached screenshot.
