What cutter do you have? Onyx have more possibilities to automate cutting workflows, while Flexi have more possibilities to configure: e. g. sorting vectors or Overcut. But: e. g. Summa Cutters allow to set an overcut in the plotter itself, so it would not be needed to configure in the software.

If you use output-devices with serial or parallel interfaces (Gerber Edge, Gerber Plotters), you can run into trouble even on Windows 10. Gerber has adaptors which are working ob windows 10, but no warranty until now that they work on 11.

I dont think that this is an issue of curing. But you can test it by let a print sit for some hours before cutting. After exposing to UV-light, prints will post-cure for up to two days.

Thrive is the high-end version of Onyx, with a network licence, web interface (dont work online, every installed thrive is a local webserver) a d lot of other features to subscribe to, for example „Color Check“-process control. Mich more expensive than regular RIP Center or Postershop.

I‘m not in the HP business anymore for now nearly three years, but as far as I remember there were profiles for hundreds of medias available to download into the printer (and so they are available for flexi too). In addition, with the Latex 360, it is possible to create own ones.

With a Latex 360, profiles are downloadable through the printers operation panel into the printer (button media library). As soon as your printer is connected successfully they ill be synchronized to Flexi.
