Choke in Illustrator - Which Way?

There seems to be several ways to do chokes and spreads. How do you do yours in Illutrator?

overprinting/ko strokes - easy really

oh - there's also the trap function where i think you can use negative traps (ideal for metal decorators) which is more than choke - it creates air-gaps
