I remember some on here were "ripping" out cortana (and thus other functionality), before MS did it for y'all. This is "clippy" vibes, people didn't like interacting with the computer that way, outside of the original novel approach, especially if there isn't an accessibility reason, I don't see many people like this.
This isn't even getting into the telemetry concerns.
Now, at some point, there will be methods to rip this out, just like before, with also castrating other features, but that will always be a game of catch up and people will have to stay on top of things as well. Always checking to make sure that there isn't an "update" (and with telemetry the way that it is, there actually don't need to be a traditional "update" to get things switched over, so no, it isn't just as simple as make sure there are no updates on a computer, welcome to the wonderful world of always connected computing) that has restored defaults.
