covering tiles with vinyl

Not a newbie
I have a customer that have a restaurant at an amusement park. He want me to cover the tiles on the front of his countertop with vinyl (or other products). The first one is 215inX6in and the second one 180inX6in. The tiles are very small (1sq/inch). Again, the tile is outside.

What materials/technique would you suggest? Would it be better to just cover it with ACM or other rigid material and find a goog double sided tape to put it there?

I'm open to all suggestions.

Sound like a great product, but at +- 5,30$ sq/ft here in canada, it is pricey.
