Being a grandpa is more fun than working
I'd bet a hundred bucks that it's bold condensed modified roman, with wedge serifs. It was definitely hand-cut "back in the day".

You could most likely get away with plotter cutting the bold condensed typeface, and then hand cut the serifs.

I'm also a date-cutter / stone engraver...with 20 years experience as a toolmaker (injection molds).
