Looking for fully editable numbers and letter templates like this

Adobe stock has editable assets like this. Other stock repositories like istock and Shutterstock may have them too.

Ive been in Adobe stock but I am unable to change the colors on those assets. Am i missing something?

Yes! Smart Objects!
I use this when building menu files. That way I can edit the menu content/pricing without mucking up everything else.

You can create your own and save it as a graphic style in Illustrator.
