I am not understanding your question.

Most Gerber foils are opaque, unless noted otherwise as transparent.
Some have varying levels of opacity so sometimes you have to apply a flood coat under them to achieve the correct color if printing on a colored vinyl.

Opaque foils makes the life easiest....to avoid print to print errors(gaps) and other problems/fails of Gerber Edge Printers and Omega. Roland Colorcamm is a Junk but has some opaque foils(Gold, Silver Mate/Mirror, etc, etc) that are very helpful with a lot of works...
Regards.

For overprinting, opaque foils would be helpful. On the other hand, an extensive amount of additional colors including Pantone color matching becomes possible by using the Gerber Spectratone palette. With this you can create new colors by automatically overprinting one spot color on another. In the following images, you can see how one can print Pantone Orange 164 C by printing Process Yellow on top of Spot Pink.

To handle colors touching other colors, you should either use the choke/spread feature or a Spectratone setting for the color you want overprinted on Spot White.
