Currently working on printing a logo that we designed with a red to burgundy gradient. When we print, all the different burgundy colors we have used in the gradient either appear black or light red, anyone come across a burgundy that prints good within a gradient ?? I can hit the burgundy color I want as a solid but mix it with red and it changes a ton

A few things...
Make certain that in Flexi the gradient is CMYK and not RGB. RGB gradients sometimes can get strange.
In Production manager select the highest quality gradient handling algorithm.
In your rendering intents, also in Production Manager, set gradients to 'No Color Correction'
This ought to get you about as close to what you see is what you get as you're likely to get. Give it a try.

While I can't remember all of what you have to do in the output mananger I would recommend this as a possible gradient transition CMYK code.
0/100/100/0 to 50/100/100/25.
When designing gradients, try to keep a "constant" in there to avoid the "weird middle areas" of some gradients.
Keeping those two magenta/yellow values at 100 will help with that.
