The big issue with these printers is ink expiration when used in a small volume shop. So I would recommend against Lc, Lm. White and Varnish can be very useful, but you are best off if you can print some white each week. We have a UCJV330. Really like the print quality and speed. We have had no issues with it. My 2 cents

This is true. We've dumped more LcLm and White ink than I'd care to admit due to expiry dates.
Funny thing is, I think our printer is getting dementia in it's old age. It keeps forgetting to reject inks and does so completely randomly after the rejection date has come and gone.
You can also cheat a bit by pouring old ink into fresh bottle or just changing chip, but probably not something you want to get too carried away with.
Most people back-date their machines, to the point where a printer that is on modern time is the anomaly more than the norm. The 75 width printers are kind of silly, but if you can get it at a screaming deal of under $4-5k, hell yeah.
