I just got done printing some Solvex. It's drying on the rack right now. The print looks pretty good. I was planing on laminating it before installing it. I'll let you know how it goes.
Adobe Illustrator has a trace option. It takes a lot of practice but I usually get good results. The trick is knowing what is traceable and what isn't.

I know people like their JV33s so it's worth looking into. I have a 12 year old SJ540 that still prints great, and a VP540. I really like both of them.
I would go with magnets too. I once did a food truck that had 3 different companies using it. I had a frame built where they could slide in aluminum panels whenever they wanted to change the name on it. Maybe something like that will work.

Welcome from NM. A good start would be to get a copy of signcraft's price guide. You are going to want to call around to local shops and get quotes to make sure you aren't undercutting the market. In the end only you are going to be able to determine what it takes to keep the lights on.
