Does anyone know what would cause my JV300 Plus to do this? Cleaning and loading the ink doesn't fix it and I replaced the cap

Check cap alignment, dampers are a cheap(ish) consumable that tends to wear out and cause ink starvation. Could be a head issue, but best to start with the low hanging stuff. Also, not a bad idea to swap the waste ink pump if you haven't already.
Aveces hacer muchas limpiezas también daña el cabezal lo más recomendable es que un técnico mimaki te explique y corrija en daño en tu cabezal te lo digo por experiencia propia dónde trabajo hay una ujv 100 160 plus y evitamos hacer limpiezas cuando salen los test así para evitar dañar el cabezal prueba cambiando el capim y los dampers que hay puede estar la falla
