Our installers ran into this also, and if the door is reinforced/armored you're in a real pickle. They haven't found a good solution yet, so we've been modifying layouts to accommodate for missing the door handle on 2020 cruisers and notifying the customers that we can't remove them like before.
Everywhere I have worked that used 3rd party inks had issues with heads going bad. Here, we only use OEM inks (now OEM/MCS inks) and have never had any head issues.
We print a LOT of vinyl, so you'd think we'd go through heads.... only ever replaced them due to employee negligence/head strikes.
Here is a template for a 2018 (and other years) Dodge Promaster (Full Size) Hood.
Customers wanted their logo to flow along the bodylines of this hood, so I had to draw it up to get the curves right.

The additional white ink does not cause any more maintenance/cleaning issues than normal. Maintenance is very minimal and quick when necessary. We spend about 5 minutes a week cleaning each of ours.
I just want to recommend comparing a 60600 or even a 40600 (if you have a lighter workload) to the 80600. I do not have faith in the additional inks longevity and recommend sticking with a dual CMYK printer if it is possible. For fine art prints latex is nice as long as the heads are all in...
I think it is do-able for most medium and larger sized businesses as long as there is overlap in departments. I'm usually here at 7/7:30am until 5pm, so turning that back to 4 days would eliminate some overtime. If one employee worked Tues-Fri and the other in the same area worked Mon-Thurs...
Both of those are "OK" looking. I would also recommend a solvent printer, running a quality mode (not high speed). UV is not what you want for wraps at all and Latex isn't that great on small details.
I would also recommend using 3M IJ480mc for the vinyl paired with the matching 3M laminate...
Our Epson printers are workhorses here. We run about 3 rolls per day, every day, on ours. No major issues on the 60600 series. Had a few manifolds blow after a few years on the older 70 series and eventually one motherboard died on one of them also but otherwise they're still running great with...

Is it just solid color vinyl striping? We have a slitter here that does a great job of getting straight rolls out of a log. After cutting/slitting the rolls it should be easy to chop off in 30" sections.
It looks like we're getting a bit off-topic, but I'l throw my opinion in now also.
I recommend the Epson also, a 40600 if you have low volume (like OP mentioned) or a 60600 if you have a higher volume or anticipate it. The speed is awesome, and color and consistency are also excellent.

The Gerber LexEdge is a Lexan product, so it is scratch-proof. It is used on many different applications, but our customers like to use if for machinery faceplates, dash panels, etc and other places where constant repeated use would take a toll on regular decals.
