Reverse gilding with water size can be tricky there is a lot that can go wrong.
You need to use loose leaf and pick up the leaf with a gilders tip and transfer it to the glass carefully.

I prefer a rigid drill pattern over paper or cardboard less chance of drift especially on smaller letters.

If your work is over the top you can charge top dollar,have a backlog of customers who will seek you and gladly pay top dollar.

Well that depends on how you and your customer perceive your work.
