Perhaps the best you can do is process out the pantone chart on the material and have the customer sign off on the color they choose. I realise this is more difficult for small dye sub, but it does give the customer the 'choice' of which color they want, and you already know you can provide...

Not printing at all? Cables, connections, fuses. Printing some: Put a syring on the output of these caps. If you have no vacuum, then you need to check the condition of the caps and the alignment to the heads.

Trying printing out one of these and picking the closest color. It is all about profile and whether your "Maroon" is actually available in the gamut of the ink.

Have you contacted them? They do have special firmware, as they OEM this product.

Which firmware are you on and where did you get it from? Who upgraded it?
