Buy a laser and start running sheets of acrylic through the printer. That should give you more work to cut all kinds of things after print. Kern 4x8 to complement the printer should be just enough.
You forgot to specify that it's "best" when it comes to Latex printers only, even then I still read about people preferring older models every now and then.
I've done multiple prints (4x8 sheets of mirror acrylic, chrome vinyl and even pieces mirror) with regular UV lamps and LED UV lamps and neither seem to really affect the lamps.

Grab that and you'll be satisfied + be able to play games if it slows down a lot!
980 is an overkill
May have been done by you already but have you tried rotating it to see if you're still getting it?
Also in Onyx, try to switch Media ICC profiles around to Off/On/3M etc... in Job Editor, that could give you some different results.
And if that doesn't work, try to just print it through Photo...
I've heard of suppliers cutting the rolls down for you if you can't do it in-house, worth giving them a call.
I'm sure some of the other guys could suggest places.
Depends on what you have printed.
If it's a 29.5" print then you will need something wider than 30" to compensate for the laminator skewing.
You can always cut down a bigger roll to 29" if the print isn't occupying the full width.
Using wider lamination is not uncommon but creates a nuisance if...
When you run a sample cut square or the logo, is it the normal size? I think it's about 5/8" or around there.
Plotting the Mimaki logo I think it's about 4" wide.
Also is it possible that in the FineCut menu, the scaling is slightly less than 100? Maybe it was accidentally clicked.
If you have a lot of fine detail in his canvas prints then I would just get the 6800 to go with it, L360s have this graininess when you have something very small (but then again it is canvas with its own texture).
If it's a generalized image that you are stepping away from then latex will work...
