Your profile is wrong for the material. The green should not be all grainy like that, and it definitely is overinking the black. In addition the barcode should not have bumpy lines.
AI doesn't seem to be useful at all in what I've tried. I have yet to see any which gives you a picture that is high enough resolution to use on a sign. And trying to get it to give me the picture I want seems nigh unto impossible.

You need to get her an account with a sublimation supplier. They will have the templates for the items she is personalizing. Conde and JDS are the two I have used.
The question you have about how to attach the sign to the post is the reason why the kits exist. If you use a kit, they are made to hold the 3mm or 6mm ACP by slotting a PVC post with hardware that keeps it from moving. That type of kit there is no lumber involved.

I just tried that and it appears not to work. There is an align to selection button, but selecting it doesn't align one on top of the other; it aligns them to the same baseline. Aligning them horizontally works.
If you really wrap it, it takes forever compared to the square footage of vinyl. You'll want to have the bodywork off the cart so you can work on your table. The last one we did was just a two seater. It was 60 sq ft of vinyl and 7 hours of installation.
