I've been contouring the majority of the yard signs for our clients these last couple weeks. Simple designs, but ours stand out over the other shops by a landslide.
I'm guessing you went through the proper channels to get that school logo and asked permission to manipulate it for profit. If you didn't, in my opinion you're no different than the fast signs people.

Best bet is to ask the fab shop cutting the metal, which file format they prefer. Most likely it'll be a dxf file of just a cutting path, leave all the graphics out of the cut file. If you need precision, make sure you give them dimensions, because they should be able to compensate for cutting kerf.
True coasters are made with blotter/pulp paper for absorption, but doesn't come cheap or in a 4x8' sheet.
We're going to run a job of 10,000 coasters soon on 4x8' 48pt paper. UV printed and cut on our Zund.
I don't see a problem with that, keep it tasteful and keep them in check. Did you post any progress pictures of it in your shop? If not, you should, and claim credit where credit is due.
Once you go ssd, you’ll never go back. One of our employees built some workhorse computers for about $800. It’s definitely doable, but I’d go with a Costco dell xps setup with SSD as a second option.
