That cap adjustment will always move up afterwards. It's basically asking you to tell it when the cap top touched the head and then it moves up enough for it to seal.

Ink nozzles dropping out during printing is almost always a bad damper or other ink flow issue. I'd start with the dampers especially if they are over 1 to 2 years old.
