Safest bet is to use sRGB. Especially true if you re-purpose your artwork for use on the web. Web browsers choke on artwork saved with AdobeRGB (1998).
Once you get your equipment linearized and your profiles created don't forget to create your work in the PROPER color space. Avoid as many color conversions as possible between your design program and your wide format digital printer.

I guess it all depends on whether or not hit and miss quality is what you want to let out of your shop. There are other shops out there that just wouldn't call that acceptable though. To each his own I suppose.

CMYK is NOT a standard. Printer (and ink) manufacturers are not constrained by any formula or standard to produce their inks in any kind of predetermined fashion.
A properly linearized printer and an ICC compliant workflow does wonders for consistent wide format digital output...
