What if you print your "pastel" or "bright" color on clear vinyl, then back it with metallic silver vinyl?
Then cut all your text/logos/whatever in reverse, weed, mask, apply on inside of glass.
What finish/color/look is your client looking for, specifically?
Lots of mylar/polyester/metallic films have the same finish on adhesive side, just depends what you're looking for and how wide of a roll you need to use.
What kind of flatbed printer are you using? I'm surprised it doesn't have enough vacuum power to hold down a sheet of coroplast. I don't know that a heat gun will help here. Usually all you need is a bit of pressure/weight on the ends if a sheet is warped - as soon as it seals the vacuum will...

We have (1) S60600 in a 2500 sqft shop, and when printing heavy coverage/long runs I can taste the ink in the upstairs office, which is almost completely sealed off from the production area.
That's with lots of ceiling fans going and an air scrubber beside the printer.
Contacting X-rite might be a good start like you mentioned, see if they have anyone they would recommend.
You could also talk to ND Graphics, we had Wissam (from ND) come to our shop for 2 days and help us build some profiles w/ our i1 in Onyx. We ended up spending/wasting almost a full day...

I'm not near our RIP station but you SHOULD be able to achieve this.
Add 10mm "bleed" and set it to white.
Add trimlines and set to bleed area or something along those lines.
