Big Fish had a 36" roll of real nice gloss photo paper that is very good for scratch resistance. Printed nice with ecosol max inks.
Only issue is if they have a 30" roll to fit your printer.
I think the first click you make on a color will be the reference and the next one and there after is the sample. You could click back on reference to make a new selection to compare that one with another but mainly I think you just look at the C number on the sample side and keep moving back...

I think any media laminated would do similar if not worse when rolled image in.

This is also the same for a taped hem. Rolling graphic side out keeps the hem nicer but if the banner is not wrapped with paper to be stored you risk scratching the face. If you have a tube to store them in, its not an issue.
I tend to set up a file for each standard banner size I tend to do. 3'x6' 4'x8' etc. and on that file place the grommet spots. Then I just open that file to start a layout and the grommets are there from the start.
