Have experienced this all the way back to the first generation HP Latex, printer will suddenly reject a half full cartridge, usually marking it faulty cartridge. No way to get it working again.. only way is new cartridge.. strange that this still is an issue on the 300 series
Are you in using original HP ink? We experienced exactly the same symptoms as you do, changed o-rings, filters etc. Ended up being a bad batch of HP ink, very very frustating
Unless the lines are leaking ink all over the place, then I see no reason to replace the lines. (and usually if there is a leak on the never series 3 printers 3xx & 5xx is almost always the rubber seals on the bottom of the ink towers in the carrige)
I have never experienced a line plugged...
Personally I would never buy a product, where you are not able to access the service menu.. it is your freakin´printer!
Please stop this nonsense Roland and others!
I am not an expert on solvent printers, but whatever you decide, my recommendation would be to buy a printer where you have the full access to all service menus!
Even if you choose to let the vendor service it in the beginning.
I have owned both eco-solvent and now latex printers 2x26500 and 1x570. Your planned 360 is just in between. I would say go ahead. Heads are considered a consumable and fairly cheap, you can change them yourself.

Thanks for all your answers, I know that we are not able to use an off the shelf empty HDD, it needs the special HP software (NetBSD based/UFS file system) What we are looking for is another FB500 owner that is willing to make a backup image of their harddrive and share this image with us...
We have one of these old UV printers, with what i believe to be a corrupted harddrive.
The machine is unable to access the disk partition where the data is stored.
The HDD consists of 2 partitions a small one being the operating system partition and the other one being a data/settings...
