Can't tell you anything about 123ink, but inkjetmall do some very good third party inks. I've only used their piezography dedicated sets of black inks in a 7880.
I'd be looking at someone who can tell you what kit to buy, integrate it to your rip software, and can train you/team to use it. Getting three machines in line is a few days work/training, if you want top notch results (Impala4).

Gotta say Steeltrak.
Many years ago had a client wanted just under 8x3' on DiBond, bigger than our steeltrak. Clamped down the big purple ruler, made the cuts on front face with a stanley knife, and then, how to bend and snap the off cut...?
Ended up "clamping" the 12' off cut by sandwiching...
Mine brings the ACM forward by less than 1mm - the C2 cutter actually rotates very slightly clockwise (viewed from left) when starting to cut, and I think it always has done.
Have you checked the bump stop at the bottom of the carriage is all the way down - I could see how it being slightly...
I print transparent on a canon aqueous, to back up display light boxes. Not super dense on my machine.
Oce do a very expensive option, that they say takes a very high ink load (I've not tried it at 3x the price of regular options that work for my needs).
I've not seen this in over a decade of using a SteelTrak, and yes, something looks out of alignment. How is the depth on the regular cutting head looking? If this is also standing too far forward, then ISTR there are bolts top and bottom of the main body that may not be snug.

Fake ones - HDPE. £40 - 50 for 8x4' 5mm. Most substrate suppliers can supply - tack it onto the end of your regular sheet good order. Over the years you'll go through double and then some the cost/ammount of blades to trim work out.
The absence of being able to upload a csv or similar file of products sucks (thanks spare squace).
It might be worth looking at builiding a heirachy or nomenclature of your product types, basicallyu SKU's of your products. This Link isn't a bad place to start.
