I see you've already completed this project but for future reference Astute Graphics' Phantasm plugin has some really cool effects that give you a lot more control over the outcome of the halftone. You can even do colored image halftones. Its worth the $50 if you do this kind of stuff often.
I don't think it's a terrible idea. As long as they know its a food truck it will force people to walk up to the truck to see what they have to offer and make a face to face contact with the food truck operator.

Thanks for the feedback. I'm not necessarily against using leaves. I think I'm going to draw up a hand-made typographic logo with soft curvy type and maybe some vines or leaves incorporated. I agree that an eco friendly logo should be curvy. I can't look at that last logo without seeing fire now.

The Adobe Illustrator WOW books are pretty good. I'm not sure what version of Illustrator you have but there is a different book for almost every version. You can find used ones cheap on Amazon. Do a few tutorials and you will catch on quick.
I wouldn't be too concerned about it. It's not legal but, I don't think the NFL or NHL will come after you for making one or two cars with an unlicensed wrap on it.
People make unlicensed decals all the time.
