The only legal action Mimaki can take is protecting their tech manuals. So if you want to make a video of you fixing your printer, go right ahead, but if you give out manuals in public, they could hit you with a cease and desist. But I'm sure you've found that finding them isn't that hard...

Needing to charge extra for unforeseen costs etc. is fine as long as the customer is informed first. When I get my tires changed, they show me the full cost upfront and I approve it. If there's a charge that wasn't discussed ahead of time on the final bill, I absolutely would contest it.
