I would just have some acrylic cut for these. Get a sheet of clear acrylic into something like 2x2' pieces and apply the variety of vinyl to each. Some 1st vs 2nd surface vinyl, frosted crystal, perf, etc.

We use a Graphtec that reads the barcodes continuously as long as you left-justify your prints.
We load the roll on, hit barcode mode, set it in front of the first barcode, and walk away for an hour or so and it is done.

Yes, you can pause (briefly) in the middle of a print without issue.
A slight head strike, maybe on the material clamp if it is dirty, can knock out a few nozzles during a print.
The only benefit of the 80600 over the 60600 is the white ink option. Think very hard if that is REALLY necessary for you.
The 60600 is WAY faster in speed of printing. The 60600 only requires you to stock 4 ink colors, as opposed to the specialty inks you'll have to stock for the 80600.

You should be just fine for the most part printing to a quality "gold" metallic vinyl. On your printer's media profiles you might want to lower the heater temperature a little bit if you're worried about curling or head strikes but I don't think it would matter since it is on a backer.
If the display is working otherwise, but not registering the pressure roller arm when you lower it I would look for the sensor that senses that pieces location and see if it is dirty or broken.
