Looks like the print heads are on the back side ( not like our typical print heads pointing down). Those sit vertical. I guess gravity does not have any effect on the spray. So the paper runs straight down as the heads pass in front, but again print toward the back side of the printer.

The reason they have a black and a color is for the 4 color printers. They have a single black and then a color (3 nibs). We have 6 colors so we just use two color heads. Not sure why Roland needed to list a left and right.

The CJ 500 holds 54" media and smaller. Once you get it you will be able to see where the feed rollers are and then depending on how tight to the edge you want to place them on the media, you should have about 53" of print area but less if you need crop marks printed, for the laminate/cut route...
