Sounds like a rather vigorous agitation to me with the amount of shakes per second.
That being said, our machine will be 3 years old next month and we haven't missed any agitations. Just set up a calendar reminder for 9am every 3rd Monday and it gets done before anything starts production...

Yes, this is exactly correct regarding ink density.
We leave Media Setting Number to "Use Panel Setting".
Leave ink limits at 400% in i1Profiler and don't linearize. This is done internally in the printer when you use Epson workflow.
Not sure about the double cuts, but Onyx usually has the wrong port number by default for Roland machines when setting up.
It's been ~7 years since I've had to set one up, but I do recall having that issue. If it's set to 9100, change it to 515 or vice versa.
EcoSolMAX3 is GreenGuard Gold certified, so VOCs are extremely low. Still not sure how comfortable I'd be having them that close to food, but they are approved for use in hospitals, schools and other sensitive areas.

You can compare gamut plots in i1Profiler during the last step of the process in full 3D. I use it to compare my i1 plots to Onyx generated profiles.
If you choose Epson workflow, you can cut out all of the ink linearization and limit steps.

We do 5 layers of white when doing back splash prints for kitchens etc. If we could do 8 layters in 11 minutes, we would... but on our machine it'd probably take an hour per panel and not worth the time.

LFP doesn't use any part of Office. We have it installed on our RIP workstation that does not have any Office on it. It may need a Visual C++ redistributable however.

Since you have an X-Rite spectro, you can send it back to them for re-certification to bring it back into spec. Even the calibrators need calibration from time to time.
Which version of the i1 do you have?
I don't see enough difference between the 2 and 3 to justify an upgrade (larger aperture)...
